White Chocolate Topped and Banana Cake
Ingredients:
Cake:
125g butter
vanilla
200g castor sugar
2 eggs
3 bananas mashed
50g pecans
80g sour cream
300g Self Raising Flour
2g bicarb
Topping:
125g cream cheese
30g butter
150g icing sugar
60g white chocolate
Sauce:
100g castor sugar
5ml lime juice
1 orange
Method:
Cake:
1. Cream the butter with sugar and
vanilla until aerated.
2. Add the eggs slowly and
incorporate the mashed banana and sour cream.
3. Fold in the pecan nuts, shifted
flour and bicarb.
4. Pour the mixture into a greased springform tin and cook for approximately 75-80 mins.
5. Allow to cool before removing
from the tin.
Topping:
1. Beat the cream cheese and butter
and then add the icing sugar - mix well to combine.
2. Melt the white chocolate and add
to the cream cheese mixture.
3. Spread evenly over the cooled
cake.
